Pavilion is an omakase menu by chef Nick Bognar. An intimate experience within the courtyard of Sado. Dinner runs roughly eighteen courses of nigiri, sashimi, and specialty dishes: dry-aged fish flown in from Japan and the Thai-influenced cooking Bognar is known for. Sarah Osborn closes the meal with dessert.

The Experience

What exactly is Pavilion?

A private omakase dining room built into Sado's rear courtyard, seating twelve guests across three configurations — six seats at a curved marble sushi bar, a two-top, and a four-top. It's an intimate, chef-led tasting menu — Japanese technique carried through with Nick's Thai heritage — separate from the main Sado dining room, though it shares the address.

How many courses, and what should I expect on the plate?

Roughly eighteen courses moving through nigiri, sashimi, and specialty dishes — dry-aged fish imported from Japan and Thai-inspired components woven through an otherwise traditional omakase format. Sarah Osborn handles dessert.

What are the seating times?

Two seatings, Friday and Saturday: 5:30pm and 8:30pm.

How long does dinner last?

Plan for about two hours, start to finish.

Booking

How do I get a seat?

Through Resy. Reservations release one month prior to the reservation date at 10am, and seats tend to go quickly — worth having your Resy account ready beforehand.

What does it cost?

$185 per person. Supplements and beverage pairings (sake, wine) are available at additional cost.

Do I need to pay when I book?

Yes — payment is required to secure the reservation.

My party is larger than four — what do we do?

The room seats twelve guests total, split across the sushi bar, a two-top, and a four-top, so a single table can hold up to four. For anything larger — including a full buyout of the room for a private event — email reservations@sado-stl.com directly.

Policies

What's the cancellation policy?

Cancel or reschedule with at least 24 hours' notice and there's no penalty. Cancellations inside that window, and no-call/no-shows, are charged in full.

Is there a dress code?

No formal dress code — guests show up anywhere from business casual to upscale formal. Wear what feels right for a special-occasion dinner.

Can you accommodate allergies or dietary restrictions?

We can accommodate gluten, shellfish, tree nut, peanut, and dairy allergies. Given the omakase format, allergies outside that list can't be guaranteed — let us know when you book so the kitchen can plan around it.

Is gratuity included?

A 20% service charge applies to all purchases. Additional tipping is left entirely to your discretion.

Can we bring our own wine?

Yes — corkage is $80 per bottle.

Where is Pavilion?

Inside Sado, on The Hill: 5201 Shaw Ave, St. Louis, MO 63110. Pavilion's own entrance opens onto the courtyard at the rear of the building.

Where should we park?

Plan to arrive a few minutes early to find parking on The Hill — street spots fill up, especially on busy weekend nights.
